Veggie Rice Paper Rolls with Peanut Butter Lime Dipping Sauce


Clean eating does not simply entail unprocessed foods. There are so many different ways to go about it, one of which is to go for raw and vegan. I’m not a vegan but I do enjoy my occasional raw and vegan meals especially this veggie rice paper rolls. Actually, I’m addicted! I even went a couple of lunches in a row relishing this meal.

The crunch of the veggies against the chewyness of the rice paper is perfectly balanced with the sweet, tangy and nutty flavour of the dipping sauce. A true favourite which you HAVE to try yourself!

Make them for yourself, for the family or for a potluck and wow them with your impressive healthy kitchen skills. (Although they’re incredibly easy to make! Nobody has to know!)


Veggie Rice Paper Rolls 
1 carrot, shredded or julienned
1 cucumber, shredded or julienned
1/2 red bell pepper, julienned
red cabbage, julienned
romaine lettuce
basil leaves

Yields: 6-7 rice paper rolls

Peanut Butter Soy Lime Dipping Sauce
2 tbsp real peanut butter
1 tbsp low-sodium soy suace
1 tbsp honey/agave/maple syrup
juice of 1/2 lime
3 drops of  Young Living lime essential oil

Mix all sauce ingredients and enjoy licking the bowl off. Oh with the veggie rolls too of course 😛
