Since I’ve been miniziming my dairy intake, the crave for something creamy has taken over and I cannot be any happier about this new recipe. Secret ingredient? CASHEWS! Who’da thunk it hey?
It’s going down as one of my favourite ingredients cause you can do SO MUCH with it! I’ve made salad dressing with it, dessert (which I’ll post soon) and now pasta sauce! Its versatility not only stops there, I made two different types of pasta sauces and I can only imagine how many other varieties I can do with it.
I served it with Einkorn Spaghetti by Young Living which is amazing for my digestion! Einkorn is one of the most ancient forms of wheats you can find which is unhybridized and you can be sure that it is low in gluten and GI. For someone who loves pasta and is easily bloated due to starchy gluten, this dish is a life-saver. Healthy, vegan, wholesome and creamy! I can’t ask for more!
Creamy Pasta Sauce
1/2 cup raw cashews, soaked in water overnight
1/2 cup water (more depending on desired consistency)
1/2 clove garlic
juice of 1/2 a lemon
handful of basil
1/2 a handful of parsley
1 tsp nutritional yeast seasoning
Tomato Cream Pasta Sauce
1/2 cup raw cashews, soaked in water overnight
1/2 cup water (more depending on desired consistency)
1/2 clove garlic
juice of 1/2 lemon
1/3 cup no salt canned tomatoes
1 tbsp maple syrup
1 tbsp balsamic vinegar
salt & pepper to taste
Method
1. Drain soaked cashews and throw into blender. Add water and blend till smooth.
2. At this point you can separate them out or purely add the ingredients for a specific sauce.
3. Blend in the other ingredients.
4. Adjust sauce according to taste.
5. Serve with pasta!
AWWWW this looks so delish! I myself have been vegan for just over a week, and also am trying to fight off the cream craving! This is a bonus because I looooove cashews, and pasta! This post has made me very excited to go grocery shopping tomorrow. In regards to nutritional yeast, do you find it in your local supermarket? I’ve never seen it before, but then again have never tried looking! Thanks for this 🙂
