Massaged Kale Salad + Coconut Water Dressing

I love pleasant surprises… Especially when the surprise came from me myself and I. Not too long ago, I was trying out this a coconut water dressing for my kale salad and wooozaaaaa! So delish!

I wanted to have more raw kale in my diet and I hated how tough kale is when raw. So I found out that the amazing technique of massage kale salad with olive oil. And so I did. And then I added another ingredient in, another in and another and hey! It actually taste pretty darn gooooood.

Once I got the yummy dressing all figured out, I had to make sure my salad ingredients were complete with all the textures. Crunchy, creamy, chewy… The crunch of the kale and pistachio, the creaminess of the steamed pumpkin and the chewiness of the dried cranberries… What else am I missing? Complete with the perfect dressing, this salad is a burst of your gastronomical sensory system. Sweet, salty, tangy, spicy, crispy, chewy, nutty, creamy… I can’t ask for more…

Salad Ingredients (Recommended)

1 bunch of kale, stems removed
1/3 cup cooked lentils
1/2 cup roasted/steamed pumpkin or squash
1 tbsp dried cranberries
1 tbsp chopped pistachios
1 tbsp pepitas/pumpkin seeds

Dressing Ingredients

1 tbsp olive oil
1/4 cup coconut water
1 tbsp Blue Agave/honey
1 tbsp apple cider vinegar
squeeze of lemon/lime
1 drop of Young Living lemon oil
dash of salt & cayenne pepper

Method

  1. Prepare the washed kale in a glass bowl and add all the dressing ingredients and massage them with your hands until kale has soften.
  2. Add more of whatever dressing ingredients you prefer more of to suit your taste.
  3. Add the rest of the salad ingredients in and toss and SERVE!
